Situated in Central America and often referred to as the land of lakes and volcanoes, Nicaragua stands out as a haven for high-quality coffee due to its fertile soils and diverse microclimates.

Fourteen years ago, Ricardo Cuadra Fajardo discovered a farm for sale and was instantly captivated, leading to its immediate purchase. Positioned within the Datanlí El Diablo Nature Reserve, Finca Los Altiplanos is surrounded by abundant local flora and fauna, with the Jugüina River bordering the farm and providing fresh water for the coffee plants and other vegetation.

In addition to coffee cultivation, Ricardo also grows wheat and various vegetables on the farm. Thirty hectares of the land are designated as native jungle, creating a diverse canopy of shade under which the coffee thrives. The farm's three varieties of guaba contribute not only to shading the coffee but also play a role in Nitrogen fixation and serve as a sustainable source of firewood.

When the coffee cherries are ripe, they are carefully hand-picked and transported in plastic boxes to the on-site wet mill. The cherries are submerged in water to remove any floaters, pulped, and left to ferment for 12 hours to break down external mucilage. The water used is purified in an oxidation lagoon. The coffee is then sun-dried on patios for 7-10 days, depending on the weather.

The end result is a cup of coffee with a vibrant blood orange acidity, offering a smooth to silky mouthfeel as it cools, complemented by a delicate honey-like sweetness.
